Zucchini Bread

I had some time this week to make 10 loaves of zucchini bread to share with my co-workers! I have been asked a couple times for my recipe so I thought I'd share. This time of year when gardens are filled with such generous produce it is so wonderful to be able to share bountiful gifts.

Zucchini Bread
2 cups shredded Zucchini
1 cup oil
3 eggs 
2 cups flour
1 3/4 c. Sugar
2 tsp. Cinnamon 
2 tsp. Vanilla
1 tsp. Baking Powder
2 tsp. Baking Soda
1 tsp Salt 
1 cup chopped walnuts, (optional)

Grease and flour two loaf pans. 
Bake at 350 for 55 minutes. 


I often times forget how much I enjoy baking! It is relaxing for me and it warms my heart to bake for others.  I need to make more time for the actives that make me happy like this!
